Caponata is a traditional Sicilian eggplant salad. Based on a recipe made by Celia's Mother and her Nonna Giovanna, eggplant is sautéed with onions, celery, olives, capers and tomato. This sweet and sour dish is good hot or cold. Serve on crusty bread, on grilled fish or meat, or mixed with pasta. (Celia's favorite is in an omelet with fresh mozzarella!)


Try this easy hors d'oeuvres with your evening cocktail....

Place a mini round of Brie in a baking dish. Spoon some Caponata over it and heat until cheese is soft. Enjoy with bread or crackers.
